I LOVE adding recipes to the blog because it will, for the most part, be easy peasy and QUICK. I love quick. But it must be quick AND tasty. This recipe is both of these!
We have decided to return to vegan life during this time of sickness in our world. (Praying for all of you!) I have returned like a beast and not only am I trying all of the recipes, I am creating my own! (Stetson, the hubs, even made walnut milk and it is the best milk I have ever tasted!)
This quick recipe is great for a quick tasty lunch. We eat it mostly with saltine crackers but it is amazing on homemade bread with bit of tomato and spinach (or any other green that is your favorite).
So because I enjoy the quick and easy, let us get on with the recipe!
1 can of garbanzo (chickpea) beans
1/2 of a medium red onion *diced*
1 teaspoon of nori flakes
1/2 teaspoon of dill
1 tablespoon of nutritional yeast flakes
1 teaspoon of cajun spice
1/2 of a large lemon
1 teaspoon of dijon mustard
2 tablespoons of vegan mayo
salt and pepper to taste
1. Place all the ingredients in a food processor or blender and pulse (Do not blend or it will form a paste like texture :))
