I absolutely LOVE tofu scramble! It is one of my family favorites and it is packed with nutrition! I love to add different veggies to it and at least one with more of a meaty texture or a throw in some veggie sausage. This time I decided to add Benevolent Bacon by Sweet Earth. It is my favorite vegan "bacon" because its texture is very close to pork bacon! I usually add a bit of salt to it while frying it in a bit of olive oil in a frying pan. This gives it that salty bacon taste which is...heavenly. :) Adding this to our tofu scramble gave it a more savory flavor than usual and it was perfect!
Perfect for a special occasion or a typical Monday morning! It is an excellent meal for a couple or a big family. I hope you enjoy creating this dish! Let me know your different variations and what veggies you use in the comments!
1. Firm Tofu (Any brand)
2. All of the veggies! (Choose your favorite kind! I used kale, red bell pepper, red onions, potatoes, and topped with seitan bacon, avocado and salsa.)
6. Nutritional Yeast
Press tofu with a towel to remove the excess water.
Fry seitan bacon in a bit of olive oil and season with salt.
Saute onions in frying pan until translucent
Add potatoes to the pan
Season with salt, black pepper and onion powder (Make sure to cut in small pieces to ensure that they cook quickly and thoroughly.) Check to see if potatoes are cooked by using a fork to see if they are tender to touch.
Add red bell peppers and stir in.
While red bell peppers soften a bit in the pan, massage kale with lemon juice to make more tender for eating.
Stir in kale and cover for a few minutes until a wilted.
Crumble tofu in the pan and season with a bit of turmeric to create an "egg" color.
Season with a dash of nutritional yeast
Top with sliced avocado and seitan bacon
